Add all base ingredients to a blender. For savory crepes add desired spices, seasoning, and spinach. For sweet crepes add sweetener, vanilla extract, and cinnamon. Blend on high until smooth. Let sit 5 minutes.
Preheat an 8" pan and coat with non stick spray, butter, or coconut oil. Pour in batter and cook 2-3 minutes, flip carefully, and cook on opposite side until golden brown.
