Keto Waffles/Pancakes


  • 5 tablespoons chia seeds (ground)
  • 3 tablespoons flax meal
  • 3 tablespoons coconut flour
  • 2 tablespoons Lakanto or sweetener of choice
  • 2 tablespoons melted butter
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 cup milk of choice


Step 1
Add all ingredients to a large bowl or stand mixer. Mix on high until smooth and well combined.
Step 2
Preheat waffle maker and coat with non stick spray, butter, or coconut oil. Pour in batter and cook for 2 cycles until waffle is browned and cooked through. For pancakes, cook 2-3 minutes per side.
Step 3
If batter becomes too thick while making waffles, add more milk 1-2 tablespoons at a time.
