What can I say… these kind of just speak for themselves.  Taste tested, kid AND husband approved.  Doesn’t get much better than that!

Blueberry Crumble Bars

Ingredients

  • 1 1/2 cup oat flour
  • 1/2 cup coconut sugar
  • 1/4 cup softened coconut oil
  • 1 tablespoon honey
  • 15 drops Vanilla Cream Stevia
  • 3/4 teaspoons cinnamon
  • 1 pinch salt
  • 1/2 cup Chobani 0% Plain Greek Yogurt
  • 1 Large whole egg
  • 1 teaspoon vanilla extract
  • 30 drops Lemon Stevia
  • 1 1/2 tablespoon fresh squeezed lemon juice
  • 1/4 cup oat flour
  • 1 cup fresh blueberries

Directions

Step 1
Preheat oven to 350 degrees. Grease a loaf pan with non stick spray or line bottom/side with parchment paper.
Step 2
Place first 7 ingredients in a bowl and mix with your hands until a course crumble forms (1 1/2 cups oat flour, coconut sugar, coconut oil, honey, vanilla stevia, cinnamon, salt). Place in the fridge.
Step 3
In another bowl mix Greek yogurt, egg, vanilla, lemon stevia, juice from lemon, 1/4 cup oat flour until well combined and smooth. Fold in blueberries.
Step 4
Take crumble from fridge and place 1/2 of the mixture into loaf pan as evenly as possible. Pour in wet mixture. Add remaining crumble mixture on top of wet mixture evenly.
Step 5
Bake for 25-30 minutes until center mixture feels and looks set.
Step 6
Let cool completely and place in the fridge to set firmly. Slice and serve.
