A few weeks ago, I had a huge craving for some good old fashioned strawberry shortcake. However, I didn’t feel like playing around with any traditional recipes, I didn’t want to go out to buy any, I didn’t want to make a huge batch of anything since it would only be my husband and I eating it, and I really just wanted something fast and easy. I figured I would try to keep things SUPER simple and attempt using my usual pancake recipe as my shortcake base. Worked like a charm! I got my shortcake fix without the fuss or extra calories that traditional shortcakes would have. Definitely hit the spot!
I think I may need to start repurposing some old recipes more often… this was too easy! It’s the perfect little snack to split, great for the kids, or even as a post workout meal for yourself ( I could easily eat both little servings of this, no problem)!
Strawberry Pancake Shortcake Parfaits
Ingredients
- 1/3 cup oat flour
- 2 tablespoons coconut flour
- 1 teaspoon baking powder
- 1/2 cup Strawberry MuscleEgg egg whites
- 1/2 cup unsweetened Vanilla almond milk (** depending on your coconut flour, you may need to add 1-2 more tablespoons **)
- 40 drops Berry Sweet Leaf Stevia
- 1/2 teaspoon vanilla extract
- 1 cup chopped strawberries
- 4 heaped tablespoons Reddi Whip
- 1 tablespoon coconut sugar (** OPTIONAL **)
Directions
Step 1 | |
Combine all ingredients in a bowl (except strawberries and whipped cream) and mix until well combined | |
Step 2 | |
Preheat a large skillet or pan to medium-low heat and coat with non stick spray | |
Step 3 | |
Cook 4" pancakes 2-3 minutes per side until golden brown | |
Step 4 | |
Cut pancakes apart, divide evenly between 2 dishes, layer with fresh strawberries, and top with whipped cream and a small sprinkle of coconut sugar |

March 22, 2015 at 6:58 pmI only have muscle egg vanilla. Do you think thie recipe would be as good with those in place of the strawberry? Maybe add a little strawberry extract?

March 23, 2015 at 3:40 pmHI Erin! Vanilla will work but the strawberry gives a VERY big flavor! I LOVE the strawberry MuscleEgg… super flavorful! You could try substituting with extract though!
