Caramel Apple STUFFED Pancakes

If you follow me on Instagram, you will know how much I LOVE me some waffles.  I love how big and fluffy they are.  I love how crispy I can get them on the outside, yet still soft and moist on the inside.  I love their shape and ability to carry toppings in each of their little “pockets”.  Waffles have my heart.  However… every now and then I’m overcome with a HUGE craving for pancakes!  It’s a rare occurrence and it doesn’t happen often, but when I’m feeling pancakes one day… I know I need to go BIG with my stack!  Big stack, big flavors, and big texture!  I need pancakes that are memorable if I’m cheating on waffles.

Yeah, I’m pretty confident about this one…

Isn’t that  just about the most beautiful stacks of pancakes you have ever seen?  Everything that pancakes should be… and MORE!  Thick, fluffy, awesome, and amazing.

Oh wait though!!!  That’s not all my friends.  Don’t let the outside appearance fool you.  Sheer pancake perfection on the outside, but there is more to these than meets the eye.  These are STUFFED pancakes, apple stuffed to be exact!

Good Lord.  That’s a beautiful sight.  Cinnamon, nutmeg, apples, caramel anyone?  It may be the tail end of summer right now, but these scream fall!!!  The pancakes themselves are super flavorful, but you add a bit of Walden Farm’s caramel dip (WARNING: a little goes a long way with this stuff) and I swear these taste just like a warm caramel candied apple!!!

So, I know I use the word “stuffed”, but the process is actually quite easy.  You just need to slice some apples (less than 1/4″ is my preference), make your pancake batter (same one I use for waffles), coat the apple slices, then cook as usual.  Depending on how much of your apple core you have cut out, you will end up with apple ‘rings’, but I usually use my handy apple corer…

If you use something like this, the batter will end up just coming together in the pan, leaving you with a ‘whole’ pancake.  Either way though, ring or not, this is one epic stack of pancakes!!!

Caramel Apple Stuffed Pancakes

Ingredients

  • 1/2 cup Kodiak Power Cakes
  • 3 tablespoons coconut flour
  • 1/2 scoop PEScience Snickerdoodle Select protein (30% off coupon below)
  • 1 tablespoon Sweet Leaf stevia or sweetener of choice
  • 1/2 teaspoon baking powder
  • 1 teaspoon apple pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup Vanilla MuscleEgg egg whites
  • 3/4 cups milk of choice
  • 1 Medium apple (cored and sliced into 1/8)
  • 2 heaped tablespoons Walden Farm's caramel dip

Directions

Step 1
Combine first 9 ingredients in a large bowl and mix until smooth. Core and slice apple. Preheat griddle pan and coat with non stick spray.
Step 2
Dip each apple slice into batter ensuring both sides are thoroughly coated. Place on griddle and cook 3-4 minutes per side.
Step 3
Layer pancakes with Walden's caramel dip and drizzle with maple syrup if desired.
