Add pumpkin seeds and water to a mason jar or large bowl. Soak overnight. Drain and replace water. Soak overnight again.
Preheat oven to 200 degrees and line a baking sheet with parchment paper. Drain and rinse pumpkin seeds. Pat dry and add to pan. Coat with coconut oil, powdered garlic, nutritional yeast, salt, and pepper.
Bake for 90 minutes. Add cooking time for desired crispness.
