PB & J Muffins

Ingredients

  • 1 cup quick oats
  • 3 tablespoons coconut flour
  • 1/3 cup almond flour
  • 1/4 cup PB2/powdered peanut butter
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup Strawberry MuscleEgg egg whites (or replace with 1 whole egg)
  • 1/4 cup coconut sugar or sweetener of choice
  • 3/4 cups milk
  • 1 cup strawberries (chopped)
  • 2 tablespoons smooth peanut butter

Directions

Step 1
Preheat oven to 350 degrees and line a cupcake pan with 6 liners or coat with non stick spray.
Step 2
Add all dry ingredients to a large bowl and stir. Add wet ingredients and mix until smooth. Adjust sweetener if desired. Stir in 1/2 cup chopped strawberries. Divide and pour into cupcake pan. Add sliced strawberries on top and drizzle with 1-2 teaspoons of peanut butter.
Step 3
Bake for 20 minutes.
