PB & J Muffins
Ingredients
- 1 cup quick oats
- 3 tablespoons coconut flour
- 1/3 cup almond flour
- 1/4 cup PB2/powdered peanut butter
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup Strawberry MuscleEgg egg whites (or replace with 1 whole egg)
- 1/4 cup coconut sugar or sweetener of choice
- 3/4 cups milk
- 1 cup strawberries (chopped)
- 2 tablespoons smooth peanut butter

Preheat oven to 350 degrees and line a cupcake pan with 6 liners or coat with non stick spray. | |

Add all dry ingredients to a large bowl and stir. Add wet ingredients and mix until smooth. Adjust sweetener if desired. Stir in 1/2 cup chopped strawberries. Divide and pour into cupcake pan. Add sliced strawberries on top and drizzle with 1-2 teaspoons of peanut butter. | |

Bake for 20 minutes. |
