Food and Meal Prep: YouTube Episode 2

Happy to report that I was able to get another food & meal prep video uploaded to my YouTube channel!  On this week’s episode I’m sharing TWO different breakfast ideas (5 days of each), a quick and easy lunch for my husband to take to work, snacks and dessert for myself that I can store in the fridge, and FIVE different dinner ideas!

Some Recipes Found in this Episode:

1. Breakfast Sandwiches
  • 3 whole eggs
  • 1 1/2 cups of egg whites
  • 1 tbsp coconut flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 cup chopped mushrooms
  • 2 cups of spinach
  • 5 english muffins
  • 2 tomatoes
  • 1 large bunch of basil

Combine eggs, egg whites, coconut flour, salt, and pepper in a large bowl or blender.  Mix until well combined.  Add chopped mushrooms and spinach to a baking dish.  Pour eggs over vegetables.  Bake at 350° for 25- 30 minutes until eggs are set in the center.  Remove from oven and let cool.

Using a large circular cookie cutter sized to fit your English Muffins, portion out eggs (use remnants on sandwiches or reserve to eat at a later time).  Build your breakfast sandwich with egg, tomato, basil, and cheese if desired.  Store in meal prep containers and add fruit.

9. Tuna Salad (smash avocado in a bowl, add canned tuna, add fresh squeezed lime juice, 2 tsps of Tajin seasoning, salt & pepper to taste.  Eat with crackers, veggies, or use on a salad.
